Ingredients:

3x 15 oz cans chickpeas, or 2 cups dry

1 lg. onion

1 red bell pepper
-
3 cloves garlic

1x 28 oz. can tomato puree

2 1/2 cups water or broth

3 Tb tomato paste
-
1/4 tsp - 1 Tb maple syrup
-
1/2 - 1 tsp berebere
-
2 tsp chili powder
-
2 tsp smoked paprika
-
1/2 tsp cumin
-
1/4 coriander
-
cayenne pepper to taste
-
2 tsp salt
-
1/4 tsp pepper
-
1 bunch red chard, swiss chard, escarole, or baby spinach
Instructions:

Saute onion and bell pepper until soft.

Add garlic, saute 1 min.

Add remaining ingredients except beans & greens
-
Boil. Simmer 5 min.

Add beans. Simmer 10-15 min.

Mash beans. But don't mash them all; you want the textures of both mashed
and whole beans.

Add greens & simmer 5-10 min longer.

Serve as-is, or over rice.
